Week 5’s Gluten Free, Simplified, Must Have Meal Plan!

A gluten-free, almost dairy free week worth of dinners for the whole family! Ingredients list included!

Happy Monday, NOPE Happy Tuesday!

Clearly I started this post hoping to have it in on Monday but that did not happen! But I did get it in!

So this week is a crazy one for us! My husband has a busy work week, my son starts T-ball, my daughter starts gymnastics, and I have something every day, including work.

As always we have 6 meals listed that are gluten free or able to be made gluten free, and I day of leftovers! I am going to be out of town with my daughter for a girls weekend, on Friday and Saturday So I have two of the meals ready to be put in the oven to keep things simple for my guys.

So this week’s menu is aimed towards more fish. My hubby has been asking for more fish, so I aim to please.

This week menu includes:


Blackened Cod
parmesan crusted tilapia
Mini Italian-style Meatloaf (Pre-made and ready to be put in oven)
Roasted sweet potato, sausage, and broccoli (Pre-made and ready to be put in oven)
Garlic Butter Steak with Brussels and butternut squash
One-Pan Shrimp Fajita Bowls

Ingredients:

MEAT
1.25LB Raw shrimp
1lb flank steak
1 Package turkey sausage
1LB ground Beef
1/2 IB ground pork
4 Tilapia Filets
4 cod fillets

VEG
3 Bell peppers any color
1 small yellow onion
cauliflower rice
Lime
Cilantro
Avocado
1 butternut squash
brussels sprouts
garlic
thyme
2 md sweet potato’s
2LB broccoli
Baby redskins halved
Lemon
Parsley

DRY
olive oil
ranch
balsamic vinegar
3/4c GF Bread Crumbs (I uses these)
brown sugar
ketchup
Worcestershire
honey

SPICES
salt
pepper
Chili Powder
Paprika
Garlic Powder
Cumin
Italian seasoning
Onion Powder
Thyme
Oregano
Cayenne Pepper

DAIRY
butter
2 LG eggs
3/4 c whole milk
Fresh Grated Parmesan Cheese

Most of these meals have sides to go with them but, With the Cod we are having Wild rice and carrots. Along with the Tilapia we are having Broccoli and mashed Cauliflower.
