A full week worth of Gluten Free Almost Dairy Free Dinners, Shopping list included!
Happy MONDAY!! I’m hoping that this week is LESS eventful than last week. This is the week that my husband and I are starting our healthy lifestyle change! We are realizing that both of us are at risk for heart disease, type 2 Diabetes, and high blood pressure; and we need to start living for our kids!

Here is the menu plan for this week.
This week’s Meals include:
-WW cabbage soup
-Greek Chicken Meatballs with Lemon Orzo/Rice
-Chicken Piccata (served with Broccoli and rice)
-Ratatouille
-Mediterranean Shrimp Bowl
– One Pan Salmon
Here is my One pan Salmon!
Ingredient List
MEAT
1lb Ground Chicken
4 Chicken Breasts
1lb of peeled, deveined and tail removed shrimp
1.25 lbs salmon
VEG
2 red bell pepper
4 Lemons
1 head garlic
parsley
1 red onion
1c cherry tomatoes
1c cucumber
mint
thyme
1 eggplant
1 yellow squash
2 zucchini
2 med potatoes
1 lime
cilantro
1 broccoli crown
2 sweet potatoes
1 yellow onion
carrots
green beans
DRY GOODS
Olive Oil
Capers
Chicken Broth
Orzo Pasta (We use white Rice)
almond flower
white rice
red wine vinegar
Tomato Sauce
All purpose GF flour
LF mayo
3c veggie or beef broth
SPICES
Salt
Pepper
Oregano
Garlic Powder
Basil
Onion powder

parsley
crushed red pepper

DAIRY
Feta Cheese

Parmesan cheese
SIDE NOTE:
With the WW Cabbage soup I add in 2 chicken breasts when I add the stock to add more protein and make it more “Hardy” for my husband. I allow this to cook in the soup until it is able to be shredded. The best option for cooking this is on the stove in a Dutch oven. “>Check this one out!
